Uthappam with sides

Uttapam – Rice & Lentil Pancake

Happy Thursday dear friends! Hope you are having a great week. This week we decided to treat you to some yummy Indian breakfast item ‘Uttapam’. We made this dish regularly when my parents were over.  It is a healthy and filling breakfast item. Uttapam is essentially made with rice and urad dal and is a very versatile pancake as you can add the toppings of your choice. The colorful uttapam packs a punch with the necessary carbohydrates from rice and protein with the lentil. I topped my pancakes with grated carrots, chopped green chillies and garnished it with a drizzle of roughly chopped cilantro. You can have these pancakes as is or try them out with some spicy chutney and yogurt. Try this out and let me know how you liked it! For the Uttapam 1.5 cups  White Rice 1.5 cups Cooked Rice (preferably white) 4 tbsp White lentils (urad dal) salt – to taste Water For the toppings Grated carrots – 1 cup Green chillies – finely chopped 1-2 depending on how spicy you’d like …

The roasted peanuts coupled with chilli flakes bring in the zing in every morsel. Well, I hope I have managed to make your mouth water. Now go ahead and try this dish and let me know how you liked it! For the Sweet Potato Tofu Curry: 2 tbsp. coconut or …

I thought about how much we all spend on eating out and was wondering if I could come up with an economical yet healthy and also easy to cook option for your meal. And voila…here I am sharing this idea with you. I came up with a Greek Lunch idea for this theme which will cost you $10 to put together. This dish is essentially inspired by Green Kitchen Travels book. In the book they served this dish with Quinoa dolmades with greek salad. But I used store bought regular dolmades and put it together with homemade greek salad. You can buy either veg/meat dolmades based on your diet preferences. For those of you who are new to greek cooking, Dolma is a family of stuffed vegetable dishes common in the Middle East and surrounding regions including the Balkans, the Caucasus, Russia, Central Asia. Common vegetables to stuff include tomato, pepper, onion, zucchini, eggplant, and garlic. If you are interested, feel free to replace the dolmades …
