This year fortunately we haven’t seen much of snow and it has been a winter we midwestern people look forward to. Some grilled meats/veggies accompanied with flavored aromatic Indian basmati rice and loads of condiments on side. Hmmm..Yummy! Two years ago, I visited New York and I had this amazing halal meal at indian/middle eastern food truck. This meal is inspired by my food adventures from my New York visit. The versatility of Indian food is that it can be easily substituted with ingredients based on dietary restrictions. Since we spent this Thursday taking you around Art Prize 2015 held in Grand Rapid in this post. With all the art prize excitement we got slightly delayed in getting our weekly recipe post out…  So here you go my friends I have all your weekend parties covered YAYYY!!! with this easy peasy party special recipe all your friends and family will ask for more of this yum dish. This recipe is from my Mom’s Indian recipe stash, Lagaan Chicken curry, a party special dish commonly made in Parsi families. Lagaan chicken curry essentially means chicken curry made in a heavy copper bottom dish (Lagaan). Though a parsi dish, it is quite a delicacy in many places in India including Hyderabad, my hometown. Uttapam – Rice & Lentil Pancake

Happy Thursday dear friends! Hope you are having a great week. This week we decided to treat you to some yummy Indian breakfast item ‘Uttapam’. We made this dish regularly when my parents were over.  It is a healthy and filling breakfast item. Uttapam is essentially made with rice and urad dal and is a very versatile pancake as you can add the toppings of your choice. The colorful uttapam packs a punch with the necessary carbohydrates from rice and protein with the lentil. I topped my pancakes with grated carrots, chopped green chillies and garnished it with a drizzle of roughly chopped cilantro. You can have these pancakes as is or try them out with some spicy chutney and yogurt. Try this out and let me know how you liked it! Sweet Potato & Tofu Curry

Happy Friday folks! Hope you’ve had a great start to your day and here is something that will make your day a delicious one too! There is a traditional dish made in Southern India using bottle gourd and milk..it is a favorite dish in many households and I have been inspired by that dish to make this sweet potato and tofu curry. In this dish, I have used a paste of green chillies with coconut milk to compliment the sweet potatoes. It is a thai style curry with Indian spices and makes for a lovely meal for your evenings. Sweet potatoes are rich in beta carotene and make a great addition to your diet and tofu adds the much needed protein punch for the day. The roasted peanuts coupled with chilli flakes bring in the zing in every morsel. Well, I hope I have managed to make your mouth water.
