There is a traditional dish made in Southern India using bottle gourd and milk..it is a favorite dish in many households and I have been inspired by that dish to make this sweet potato and tofu curry. In this dish, I have used a paste of green chillies with coconut milk to compliment the sweet potatoes. It is a thai style curry with Indian spices and makes for a lovely meal for your evenings. Sweet potatoes are rich in beta carotene and make a great addition to your diet and tofu adds the much needed protein punch for the day. Thai is one of my favorite cuisines as it reminds of spices from back home, India. For me, this is one cuisine that always brings the feeling of umami with each bite. I had this dish for the first time when I came to the US 4 years ago at Natalie’s Thai in LA and instantly fell in love with it. Looking to add some fibre to your diet today? Here is a quick bowl of everything fibrous and crunchy. I have put this bowl of simple vegan salad with some of my favorite veggies. You can add more veggies depending on your taste. This is a quick and tasty way of getting that dose of veggies for the day. Try it out and let me know how you liked it! For the salad: Serves 1 1 large avocado diced into cubes 1/2 cup toasted sliced almonds (optional) handful of cherry tomatoes, halved 1 large carrot, julienned 1/2 cucumber, diced 2 green onions, thinly sliced handful of cilantro or parsley leaves (optional) sesame seeds (optional) For the dressing: 1 garlic clove 1 tbsp fresh lime juice 2 tbsp olive oil 1-2 tsp honey (or other sweetener), to taste salt and pepper Directions: Prepare all the ingredients under salad. Chilli Tofu Brown Rice Bowl

Here’s a healthy yet filling meal option for veggie lovers. This recipe brings together a balanced meal with tofu and avocados to the delicious rice bowl. We make this dish every week and its a family favorite. It takes you about 30 minutes to make it so it would be perfect for a meal on any day. You can spice up the mix by adding some asian slaw that gives you that bit of crunch and bite. For the Chilli Tofu: (Makes for 2) 14-16 oz. firm or extra firm tofu 1 T peanut oil 2-3 T sliced green onions large piece of ginger root, grated 3 T soy sauce (reduced sodium is fine) 3 T rice vinegar (not seasoned rice vinegar) 1 T Sriracha (more or less to taste) 1 T Chilli garlic paste pinch of chilli flakes to make it extra hot Instructions: Drain the tofu well in a colander placed in the sink.  Then put tofu pieces between a double layer of paper towels and press down with a heavy pan and …
